Breakfast Cake

This works as well over a camp stove as at home. Use a non-stick 6" skillet This makes one large cake for one person or broken in half for two.

1 Cup Complete Baking Mix1/2 Cup Sugar
Handful of raisins, chopped nuts or trail mix
Cinnamon, Cloves, Allspice, your choice

Use just enough water to make a batter and pour in the skillet. Use a very low heat so it doesn't burn on the bottom. When it's brown on the bottom, turn carefully and cook the other side. Check middle with the tip of a knife to be sure it's done all the way through.

The mix can be made an put in a Zip-Loc bag then you can add water and make it right in the bag by kneading it with your fingers. This is my favorite breakfast while on bicycle tours.
